We're really excited to be sharing our first Certified Organic coffee with you! Although many microlot coffees are grown organically, financial and process barriers can make it hard for producers to actually gain recognised certification.

Francisco Lorenzo Pablo owns a small four hectare farm called El Chalum, in the Todo Santos region of Guatemala where he grows Caturra, Pacamara and Bourbon coffee varieties. The coffee cherries are picked ripe, depulped the same day, then fermented for 18–28 hours. They are then washed three times and laid on patios for three to four days to dry.

Francisco is also a member of the Asociación de Productores de Café Diferenciados y Especiales de Guatemala [ASPROCDEGUA], a smallholder's association with more than 650 members, over half of which are Certified Organic. The producers all own small farms, an average of two hectares each, growing coffee as well as other crops for diversification, including bananas, citrus fruits, avocados, guava, and cassava. The organisation offers its members access to technical assistance and provides services such as soil analysis, test farms, and social projects based on food security, education, and nutrition.
