We're happy to have a new natural Ethiopian in the house!
This delicious coffee is grown in the high altitude areas around the village of Harowacho, in the heart of Ethiopia's Guji Zone. It's surrounded by the Quto mountains and the Seboba River, a perfect environment for producing high quality coffee.
This Chebega, like most specialty coffee in Ethiopia is processed as part of a co-op of small-scale producers. About 40-60 farmers deliver their ripe coffee cherries to the Tebe Melge Washing Station, where they are sorted by grade and checked for defects. They are then placed on raised drying beds for just over two weeks, until they reach a moisture content of 11%. Raised beds help provide optimum air circulation and temperature control for the drying beans and prevent damage from over-fermentation, ensuring the highest quality end product.
