Peaberries are natural mutations that occur in about five percent of all coffee cherries, resulting in only one bean forming in each fruit, rather than two.
The smaller, rounder and slightly curved beans are known for having a much sweeter flavour profile. Since peaberries can't be seen until processing, they must be sorted during the screen grading stage of milling.
The Gatina Washing Station focuses on specialty processing, increasing the value of the cherries picked by 790 farmers in the region, who grow small 'coffee gardens' of a few hundred trees each.
